Seafood (especially crabmeat and oysters) should be kept on ice in the refrigerator. Crabmeat can be kept for about 1 week from the time it is picked. Oysters can be kept for 2 weeks from date they are shucked. If not used within this time, freeze and then use it the same day it is thawed!
How to clean softshell crabs:
On underside of crab, lift triangular apron and remove. (I remove the back as well) Pull or cut away dead-man fingers. Use scissors or a sharp knife to cut straight across the mouth & eyes section. Rinse out the middle and remove the two sand sacks, if present.
