Blue Crabs from coastal waters are brought in and cooked & cleaned immediately, then the meat is picked out the next day. Some of our "crab pickers" have been doing this for nearly 60 years. Talk about experience! The crabmeat is clean; virtually free from shell.

Seafood (especially crabmeat and oysters) should be kept on ice in the refrigerator. Crabmeat can be kept for about 1 week from the time it is picked. Oysters can be kept for 2 weeks from date they are shucked. If not used within this time, freeze and then use it the same day it is thawed!

How to clean softshell crabs:                                

On underside of crab, lift triangular apron and remove. (I remove the back as well)  Pull or cut away “dead-man fingers”.  Use scissors or a sharp knife to cut straight across the mouth & eyes section.  Rinse out the middle and remove the two sand sacks, if present.
